Polenta Cutlets and Shrimp with Soba
A few more dishes from Moosewood Low-Fat Favorites that we've had recently:

Sun-Dried Tomato Polenta Cutlets with Tomato Wine Sauce, Tuscan White Beans with Sage and sauteed farmer's market greens. The cutlets don't look very pretty, sad to say. I liked the texture, but the flavor didn't impress me (the tomato wine sauce helped with that). Patrick thought they were good. The beans were fine, but nothing special.

Gingered Shrimp with Soba Noodles (not pictured: baby spinach salad with mung bean sprouts, carrots, and spicy peanut dressing). The salad dressing was indeed spicy, but good. I really liked the noodley part of the main dish (I'd never tried soba before), but the shrimp and broccoli didn't seem to have picked up much flavor from the sauce. Maybe the flavors will blend overnight and the leftovers will be awesome. Either way, it was pretty good, and I'd make it again. Maybe next time I'll try bok choy instead of broccoli.
